Sürdürülebilir tedarik zinciri yönetiminde performans endeksi modeli: Gıda sektörü örneği

Abstract

Topraktan alınan ham maddenin işlenmesi ile başlayan gıda üretim sürecinde, kaynakların etkin kullanımı, üretilen gıdanın ambalajlanması ve dağıtımı sırasında dikkat edilmesi gereken en önemli nokta çevreyi koruyarak atık yönetimini kontrol altına almaktır. Bu süreç sürdürülebilir gıda tedarik zinciri yönetimi olarak tanımlanabilir. Bu süreçte, sürdürülebilirlik için dikkate alınması gereken birçok parametre (örneğin kaynak kullanımı, paketleme, atık yönetimi vb.) bulunmaktadır. Sürdürülebilir gıda tedarik zinciri yönetimi üzerine etki eden bu parametrelerin belirlenerek ve bu parametreler ile zincir hattı boyunca gerçekleşen performansı ölçmek bu çalışmanın amacını göstermektedir. Gıda sektörüne yönelik yapılan bu çalışmada sürdürülebilir tedarik zinciri yönetiminin performans endeksleri bulunarak, ölçülmesi istenmiştir. Öncelikle literatürden ve uzman görüşlerinden bir araya getirilen ve sürdürülebilir gıda tedarik zinciri yönetiminde iyileştirilmesi gereken parametreler belirlenmiştir. Bu parametreler, müşteri memnuniyeti, kaynak kullanımı, ürünlerin emniyeti, yenilikçilik, güvenilirlik, firma bilgileri, ambalajlama ve atık yönetimi olarak 8 boyuttan ve 34 alt kriterden oluşmaktadır. Her bir boyutun performans endeksini hesaplamak ve ardından nihai bir skor elde etmek için, Yapısal Eşitlik Modeli (YEM) ve Analitik Hiyerarşi Prosesi (AHP) yöntemleri kullanılmıştır. Türkiye'de gıda sektöründe yapılan sürdürülebilir gıda tedarik zinciri performans değerlendirmesi sonucunda performans endeksi 100 üzerinden 79,7 olarak belirlenmiştir.

In the food production process, which starts with the processing of raw materials taken from the soil, the most important point to be taken into consideration during the efficient use of resources, packaging and distribution of the produced food is to control the waste management by protecting the environment. This process can be defined as sustainable food supply chain management. In this process, there are many parameters (e.g. resource utilization, packaging, waste management) to be considered for sustainability. The purpose of this study is to determine these parameters which affect the sustainable food supply chain management and to measure the performance of these parameters along the chain line. In this study conducted in the food sector, sustainable supply chain management was determined by measuring performance indices. First, the parameters that need to be improved in sustainable food supply chain management have been determined, gathered from literature and expert opinions. These parameters consist of 8 dimensions and 34 sub-criteria such as customer satisfaction, resource utilization, safety of products, innovation, reliability, company information, packaging and waste management. Structural Equation Modeling (SEM) and Analytic Hierarchy Process (AHP) methods were used to calculate the performance index of each dimension and then to obtain a final score. Sustainable food supply chain performance evaluation results of the performance index made in the food sector in Turkey is determined to be 79.7 out of 100.
